I tend to fall pretty hard into routines. For example: I discovered the balsamic vinegar and olive oil combo for a salad dressing. I have eaten this on my salads every day at work for the past.. oh I don’t know.. 6 months?!? I know I am bound to get sick of it sooner or later, but until then- oil and vinegar it is!
The same goes for my breakfast. I fall into these oatmeal spurts where every morning there is a variation of oats filling my breakfast bowl. Eggs or toast may make the occasional appearance, but oats are always my go-to!
I was recently inspired by an Instagram post by The Real Life RD, wondering how her readers make their oatmeal have more staying power.
Introducing Eggy Oats!
This is one of my favorite ways to doctor plain ol’ oats up into a protein packed high volume meal.
There are endless variations of ways to flavor Eggy Oats, I encourage you to experiment for a flavor you fancy. To get you started- here is one of my favorite ways to cook them up!

As soon as I get up in the morning (or to make this even easier you can do this the night before) I mix the oats, chia seeds, and some water together and let it sit. While I am working out, showering, making coffee, ect the chia and oats are soaking up the water and becoming nice and soft.
Once I am starving and ready to stuff my face full of oats I pour the glob of oats and chia into a pot. Turn the pot on medium low. Add half of a banana and mash it up into the mixture. Include some milk of your choice. Give everything a good stir then add your egg. Scramble the egg into the oats until everything is combined. Cook while stirring just a couple of minutes.
Once cooked, take the pot off of the heat and stir in a little vanilla and cinnamon if you like. Top with the other half sliced banana and sprinkle on some chopped walnuts or add a spoonful of chunky nut butter to make it extra decadent.
Cooking the banana into the oats as well as the sliced nana on top make this dish plenty sweet for me. If you like a little extra sweet, feel free to add a little honey!
